Zelfo is an ecological building material composed of water and cellulose plant fibers such as hemp, flax, sugar-cane and waste paper. To retain its truly sustainable reputation, Zelfo is not combined with resins or glues and achieves optimal biodegradability. The material is moldable and comparable to wood when finished, making it an ideal green material choice for furniture, toys, instruments, and more.

I actually saw a finished Zelfo product last week and it is amazing. The didgeridoo was very impressive. I can't wait to see what they come out with next!
Begs the question of why not just use wood? Wood is renewable and sustainable (how trendy) and looks beeter than strained mush. In fact, you could just say wood is a crop, just like corn, or wheat, or any other crop. Of course that might be too much of a concept to get your head around for you chicken little's.
its not about replacing wood, its about finding uses for other waste material.. obviously.
I'm guessing it was the Didge I was carrying around at Green Fest and Bioneers that you saw?
A good reason not to use wood for didges is that around 20 million of them are made each year, currently from wood, and that level of harvest is unsustainable. While wood is a wonderful and often sustainable material, there are similar reasons for many other situations where wood - especially tropical hardwoods is currently used.
There are also cases where wood isn't a good match - e.g. where you want thin sheets with 3 axis of curvature, and many of the favored materials for those situations aren't exactly sustainable either (VOC's, toxics etc etc).
(disclaimer, I'm biased!)
