Hello,
For me, Simplicity is using the least number elements that can accomplish the goal from design...
for example: If I want a web page section that reflects luxury..I look at the very basic elements that can make this feeling...and in this case it's the outline of font...a photograph of a royal person can make it better and higher but it's not need as I already accomplished the goal of design.
Another example is this camera, the goal is taking a good picture, all you need is a lens and a button...a screen would make it better and more precise, but not needed to reach the goal.
Another thing is realization simplicity which is a little advanced and used with gestalt principles for grouping, grouping elements in a group with not more than 3 items makes it easier for human mind to realize and remove the chaos feeling. that pretty much close to the common concept of using only 3 colors in the design.

I've always worked by the belief that you know you have reached the sweet spot when adding anymore to, or taking anymore away from the design muddies it's purpose.
